Tzatziki sauce for Gyros

8 oz Greek yogurt (I use Chobani, since it doesn’t have cornstarch)
2 tbsp olive oil
1/2 lime or lemon (lime gives a bit more zing)
1 tbsp dill
3 cloves garlic
1 tbsp red wine vinegar
1 tbsp dried parsley
Salt & pepper to taste

Mix all ingredients together and chill for 30 minutes before serving.
